Not all cooking oils are good for you as a diabetic or someone who has been diagnosed with prediabetes. Studies have been done telling us that inflammation is a likely root cause of diabetes. But the oils that Americans consume the most,  are high in pro-inflammatory omega-6 fats and low in anti-inflammatory omega-3 fats. Soybean oil, followed by corn oil and canola oil are the worst cooking oils for diabetics and should not be in any diabetes diet.



Other oils are much better for diabetics including olive oil which isn’t ideal but since it is still anti-inflammatory because of its polyphenols; plus many Americans are used to using this oil both on salads and for cooking. An even better oil is coconut oil.  While coconut oil doesn’t have any omega-3 fats, it doesn’t have much omega-6 fats either so make is part of your diabetes diet or diabetic foods list, for sure.
